Ingredients

  • 1/2 pound boneless skinless chicken breasts, cubed

  • 1/2 teaspoon brown sugar

  • 8 ounces canned pineapple chunks with juice

Instructions

  • In the slow cooker, combine soy sauce, tomato paste, Worcestershire sauce, garlic powder, brown sugar, and black pepper. Mix well.
  • Add the cubed chicken breasts, diced red bell pepper, and the entire can of pineapple chunks with their juice to the slow cooker.
  • Gently stir to ensure the chicken and bell peppers are evenly coated in the sauce.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  • About 30 minutes before serving, taste the sauce and adjust seasoning if necessary, adding more soy sauce or brown sugar as desired.
  • Optionally, garnish with sliced green onions and serve over rice.

Notes

For added spice, include red pepper flakes or diced jalapeños.
Be mindful of the saltiness of soy sauce; adjust gradually to taste.
Monitor the slow cooker, especially on high, to prevent overcooking and drying out the chicken.
For extra flavor, marinate the chicken in the sauce mixture for 30 minutes before adding to the slow cooker.
