- Toast bread (I like that seedy kind that’s like $7 a loaf because apparently I’m fancy now)
- Smoosh half an avocado on top while the toast is still hot so it gets all melty
- Fry an egg—I like mine with the edges all crispy but the yolk runny enough to make a mess
- Plop egg on top, add salt, pepper, and those red chili flakes that make me feel like I know what I’m doing
That’s IT. Takes like 4 minutes which is good because my morning routine is chaotic at best. Emma called it “basic” when she was home from college last month. I told her paying $6 for oat milk lattes is basic but go off I guess.

- Scramble eggs. Not like the fancy French way all those cooking shows talk about. Just… scramble them.
- Cut up avocado
- Mix together
- Eat directly from pan sometimes because WHO HAS TIME FOR PLATES

So James has been doing this weird fitness challege with the guys from work (midlife crisis alert! 🚨) and has been counting EVERYTHING. Calories, macros, steps, probably his individual nose hairs at this point.

But he was shocked when I told him my egg-avo obsession is actually good for weight stuff. He looked it up on his stupid fitness app and had to admit I was right (I’ve saved this moment in my memory palace forever).
Eggs keep you full FOREVER because of the protein. And even tho avocados have calories, they’ve got this magical combo of good fats and fiber that tells your body “hey we’re good, no need to raid the pantry for those Doritos at 10:47am.”
I accidentally lost 4 pounds last month when I was on that project deadline for my blog sponsor and basically lived on egg-avo toast for two weeks straight. Not that weight loss is the goal—at 47 I’m mostly just trying to keep all my body parts from completely surrendering to gravity—but it was a nice surprise.

This one came from my brief attempt at low-carb eating in 2021 that lasted approximately 9 days:
- Hard boil eggs (I always forget the timing and have to google it EVERY TIME)
- Cut in half, take out yolks
- Mix yolks with avocado instead of mayo
- Add lemon juice, salt, paprika
- Refill egg whites
- Try to make them look pretty (fail)
- Eat half of them before guests arrive
How To Not Waste Money on Bad Avos and Eggs
Let me tell you about the Great Avocado Disappointment of 2022. I bought 6 avocados for a dinner party, and EVERY SINGLE ONE was brown inside. I may have cried. In the kitchen. While drinking wine straight from the bottle.
So now I’m pickier than Emma is about potential boyfriends:

For avocados:
- Squeeze gently—should feel like pressing on the tip of your nose (weird comparison but it WORKS)
- Check under that little stem nub—if it’s green, you’re golden
- Avoid the ones with weird dents/dark spots
- Buy them slightly firm if you’re not using them right away
For eggs:
- Check for cracks obviously
- Do the float test if you’re unsure how old they are (fresh eggs sink and stay flat, old ones float)
- Buy from the local farm when I remember (which is like 23% of the time because I usually grocery shop at 9pm in a semi-delirious state)
PROTIP I learned from my massive failure: If you’ve got avocados about to go bad, mash them up with lime juice and freeze them! Found this out after panic-googling “how to save overripe avocados” at 11pm once.

I’ve been eating this combo for years now, wayyy before it was cool and all over Instagram. OK wait that’s a lie… I definitely jumped on the bandwagon sometime around 2018 and now I’m pretending I discovered it. But STILL.
The thing is, some food trends are dumb (looking at you, charcoal ice cream that turned my teeth black at that hipster place downtown). But this one? It’s legit. Tasty, actually good for you, versatile enough that you don’t get bored, and EASY.
Even I can make it, and I once set pasta on fire. Don’t ask.
Anyway, I’m off to clean the absolute disaster zone that is my kitchen before James gets home from work. I promised I’d have it clean by Monday and it’s now… checks watch… Thursday. Oops.
